Coxinha (Brazilian Chicken Croquettes)

Ingredients
2 cups (500 ml) chicken broth (from cooked chicken) 2 cups (250 g) all-purpose flour 2 tablespoons butter 2 cups cooked, shredded chicken breast 1 small onion, finely chopped 2 cloves garlic, minced 2 tablespoons olive oil 1/4 cup chopped parsley 1/2 cup cream cheese (optional, for creamier filling) Salt and pepper to taste 2 eggs, beaten 2 cups breadcrumbs Oil for frying
How to Prepare
Prepare the dough: In a large pot, bring the chicken broth and butter to a boil. Once boiling, reduce the heat to low and add the flour all at once, stirring vigorously with a wooden spoon until the dough pulls away from the sides and forms a smooth ball. Remove from heat and let cool. Prepare the filling: Heat the olive oil in a pan over medium heat. Sauté the onion and garlic until soft and translucent. Add the shredded chicken, parsley, salt, and pepper. Cook for about 5 minutes, mixing well. If you like, stir in the cream cheese for a creamier texture. Remove from heat and let cool. Shape the coxinhas: Take a small portion of dough (about the size of a golf ball) and flatten it in your hand. Place about a tablespoon of the chicken filling in the center. Fold the dough around the filling, shaping it like a teardrop or drumstick, sealing the edges tightly. Coat for frying: Dip each shaped coxinha into the beaten eggs, then roll in breadcrumbs until fully coated. Fry: Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the coxinhas in batches until golden brown, about 4-5 minutes. Use a slotted spoon to remove them and drain on paper towels. Serve: Serve warm as a snack or appetizer. Enjoy with hot sauce or ketchup if desired!
