Feijoada (Brazilian Black Bean Stew)

Ingredients
2 cups of black beans, 500g pork shoulder, cut into cubes, 200g chorizo sausage, sliced, 200g smoked sausage, sliced, 1 onion, chopped, 3 cloves garlic, minced, 1 bay leaf, 1 orange, cut into wedges, Salt and pepper to taste, Cooked rice to serve, Chopped cilantro for garnish
How to Prepare
Soak the black beans overnight and drain. In a large pot, cook the pork shoulder and sausages until browned. Add onion and garlic, cooking until softened. Add the beans, bay leaf, and enough water to cover. Simmer for 2-3 hours, until the beans are tender and the meat is fully cooked. Season with salt, pepper, and orange wedges. Serve over rice, garnished with chopped cilantro.
