Moqueca (Brazilian Fish Stew)

Ingredients

500g white fish fillets (like tilapia or cod), 1 onion, chopped, 1 bell pepper, sliced, 2 tomatoes, chopped, 1 cup of coconut milk, 2 tablespoons of palm oil, 2 cloves garlic, minced, 1 bunch cilantro, chopped, 1 lime, juiced, Salt and pepper to taste

How to Prepare

Marinate the fish in lime juice, salt, and pepper for 30 minutes. In a large pot, heat the palm oil and sauté onion, garlic, and bell pepper until softened. Add tomatoes and cook until they release their juices. Add coconut milk and simmer for 10 minutes. Gently add the fish to the pot, cooking for another 15 minutes until the fish is cooked through. Garnish with chopped cilantro and serve with rice.
